The CNRS organizes a series of public events called “Les Echappées Inattendues”. These conferences, open to all, are an opportunity to learn, exchange and debate with CNRS scientists.

On April 12, Les Echappées Inattendues made a stopover in Bordeaux at the Cité du Vin on the banks of the Garonne. The choice of venue was no coincidence, since the theme of these meetings was wine and vines. CNRS researchers, and in particular Erick Dufourc (DR emeritus CNRS and member of the Loquet group at the IECB), led several conferences.  In a presentation entitled “The physical alchemy of wine: from the chemistry of wine to the physics of taste”, Erick Dufourc took participants on a tour of wine tannins, saliva proteins and the organoleptic receptors in our mouths. In a room dedicated to tasting, participants in this demo-conference were able to taste and experiment with the association of cheeses and charcuterie with different wines. The interactivity of this conference delighted the audience!
