Wine chemistry on air

On July 27th, Prun’ radio broadcasted a programme entitled “Wine, oak barrels and molecules”.

This broadcast included an interview of Professor Stéphane Quideau, group leader at IECB, who explained the nature and potential applications of the polyphenols, a family of natural compounds which can be found in wine aged in oak barrels.
